La papa (Solanum tuberosum) es originaria del continente americano y se encontraba desde Estados Unidos hasta la Patagonia. Los primeros hallazgos arqueológicos de papas datan de hace 14.600 años en Monteverde (Chile) y 8.000 años en el Cañón de la Chilca, (cerca de Lima, Perú) la papa era consumida por los aborígenes de aquel tiempo.

Se han logrado identificar 250 variedades de papas nativas. Las más comunes son las michunes, la cabra, la bruja, camota, estrella, tenauna, entre otras.
